Asian Garlic Green Beans

I’m always looking for quick and easy Asian inspired vegetable side dishes to go with stir fries or grilled items and this one

is perfect.  It’s fast and has so much flavor…they can easily become the best part of the meal.  They’re reminiscent of Sichuan Green Beans, but are faster, vegetarian, and less work.  Perfect for working in veggies at the last minute.  I think it would be great made with asparagus as well.  This recipe is adapted from Food 52 and serves 2-3 as a side.

Ingredients:

1 pound green beans, trimmed

1  olive oil (I used canola oil because I wanted a higher smoke point)

5 garlic cloves, minced

1/4  t red pepper flakes

salt and pepper, to taste

1 1/2 t soy sauce

1 t ground ginger

Directions:

Fill a large pot with water and bring to a boil. Add green beans and cook for about 3 minutes, stirring occasionally. Drain and set aside.

Heat a large non-stick skillet or wok over medium high heat for about 2 minutes to get it really hot.  Add the oil and coat the pan. Add the green beans and saute for about 2-4 minutes, or until they start to brown

Make a well in the center of the skillet and add garlic, ginger powder, and red pepper flakes. Slowly start to incorporate the green beans, until everything is well mixed.

Stir in soy sauce and season with salt and pepper, to taste.
