Spicy Honey Chicken Nuggets
I have just been craving chicken nuggets, fried chicken, any any other crunch juicy chicken I can find. When I saw this
recipe on Handle the Heat, from Cooking Light, I thought it could be made into nuggets really easily, blasted in the oven to make them crispy, and cut down on the honey to make them more savory. My hunch was right and they turned out like really savory chicken nuggets. I served them with a grilled vegetable Israeli couscous, but they would be great on a salad, as an appetizer, or with some vegetable sides. This recipe serves 6.
1 t garlic powder
1 t onion powder
2 t chili powder (I used a mixture of ancho and 1/4 t chipotle)
1/2 t salt
1 t ground cumin
1 t paprika
1/2 t ground red pepper
8 skinless, boneless chicken thighs, cut into 1″ pieces
1 t honey
1/2 t apple cider vinegar
Preheat oven to 425 degrees. Combine first 7 spices in a large bowl, then add the chicken and toss to coat. Place chicken on greased baking sheet and bake for 10-15 minutes, until chicken is just cooked through and crispy at the edges. Drizzle honey and cider vinegar over the cooked chicken, then toss to coat and serve.
