BBQ Pulled Chicken Sandwiches with Slaw

This recipe is great for a barbecue because it’s super quick and you don’t even have to turn on the grill.  Buy

some rotisserie chickens, make a quick homemade barbecue sauce, and grab a bag of coleslaw mix, and you’ve got dinner.  I made this for a barbecue potluck with friends and it was so simple, I felt a little shame when everyone else turned up with pies and the like, because I  know how little effort mine took.  They tasted so good, I let my guilt wash away.  This recipe is adapted from Food & Wine and serves 4.


For the chicken:

1/2 c plus 1 T ketchup

1/3 c unsulphured molasses

1/4 c yellow mustard (I used brown and Dijon due to limited supplies and it was great)

1 T cider vinegar

1 t Worcestershire sauce

1 t soy sauce

1/4 t hot smoked paprika

1/4 t cayenne pepper

1 rotisserie chicken, skin and bones removed and chicken shredded.

4 hamburger buns, split

For the slaw:

1 bag shredded coleslaw mix

1/3 c mayonaise

2 T white vinegar

2 t sugar


Combine first 8 ingredients in a medium sauce pan and stir to combine.  Simmer on low for 20 minutes.

Meanwhile, whisk together mayonaise, vinegar and sugar in a large bowl.  Add shredded coleslaw and toss to coat.  Refrigerate until ready to serve.

Toss warm chicken with hot barbecue sauce and heat to desired temperature.  Serve chicken on buns topped with slaw.
