Spring Salad with Buttermilk Dressing

Some friends and I had a Southern potluck a couple of weeks ago, and while my corn pudding didn’t turn out as great as I had hoped, this buttermilk dressing exceeded my expectations.  It’s great on a green salad, or tossed with

shaved cabbage and carrot as a slaw- it’s really versatile.  This recipe comes from Gourmet and I adapted the salad ingredients to look colorful and Springy.  Serves 4-6.

Ingredients:

1/2 c well-shaken buttermilk

2 T mayonnaise

2 T cider vinegar

1-2 T minced shallot

1 T sugar

3 T finely chopped chives

1 head Boston or Bibb lettuce, torn into bite-size pieces

3 radishes, ends trimmed and thinly sliced

1 c sugar snap peas, blanched

1 c cucumber, thinly sliced

Directions:

Whisk together buttermilk, mayonnaise, vinegar, shallot, sugar, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl until sugar has dissolved, then whisk in chives.

Toss the lettuce with the radishes, snap peas and cucumber and drizzle with dressing.
