Chicken Parmesan Burgers

You’re probably thinking a breaded chicken Parmesan fillet on a bun, but these are made with ground

chicken, are perhaps healthier, and definitely much simpler.  I had this meal together in under a half hour, and that included a side salad.  I really liked this dish because you might have a lot of the ingredients on hand and it comes together in no time flat. This recipe from Bon Appetit serves 4.

Ingredients:

3/4 c homemade or purchased marinara

1 bunch basil

1 lb ground chicken

1 t olive oil

1 loaf bread that’s 4″ in diameter (I used a ciabatta)

4 slices fresh mozzarella or 1/2 c grated Parmesan cheese

Lettuce leaves, optional

Directions:

Place 2-1/2″ slices of the bread in a food processor.  Add 2 T chopped basil and finely grind to make breadcrumbs.  Sprinkle over a small plate for dredging the patties in and set aside.

Heat marinara sauce in small saucepan over medium heat.  Add 2 T chopped basil.  Place 2 T of the sauce in a small bowl and add the ground chicken, teaspoon of oil, 1/4 t salt and a sprinkling of pepper.  Mix to combine and shape into 4 patties.  Dredge each side in the basil breadcrumbs.

Meanwhile, slice bread into 8-1/2″ thick slices and toast.  To cook the burgers, heat a non-stick skillet coated with cooking spray over medium heat.  When hot, add the patties.  Cook for 3 minutes, then flip and top with cheese.  Cook for another 3 minutes, then place lid over pan and cook until burgers are cooking through (another 1-3 minutes depending on the thickness of your burgers).

Place a burger on top of a slice of toasted bread, top with a couple of whole basil leaves and some of the remaining marinara sauce.  Top with lettuce, if using, and another slice of toasted bread, then serve.
