Spicy Fried Chickpeas
Fried chickpeas are a unique substitute for the typical nuts at a party. When fried, they because crunchy and nutty. This version is
spiced up with hot smoked paprika and salt. They’re best eaten immediately.
2 15 oz cans chickpeas, drained, rinsed and thoroughly dried
1/2-3/4 t hot smoked paprika
3/4 t flaky sea salt
3 c vegetable oil for deep frying
Heat oil in a heavy skillet to 375 degrees. Add a third of the chickpeas and fry until golden and crispy, about 5-7 minutes. Using a slotted spoon, remove to paper towel to absorb excess oil. Fry remaining chickpeas in two more batches. Sprinkle chickpeas with salt and paprika and toss to coat. Serve immediately.
