Spicy Lemongrass Tofu

I’ve been very faithful to my favorite way to prepare tofu, which is the Grit restaurant way of crisping cubes in a pan, sprinkling on

soy sauce, giving them another crisping, then dusting them with nutritional yeast.  I found another recipe that gives tofu so much flavor it really surprised me.  This recipe, from Pleasures of the Vietnamese Table, via epicurious.com, has beautiful yellow and green color and tons and tons of flavor.   Plus, it’s super South Beach and full of protein.  I can’t say enough about it and will be making it very soon again.  Serves 4.

Ingredients:

2 stalks lemongrass, outer layers peeled and tender white pary finely chopped (you want 1/4 c)

1 1/2 T soy sauce

2 t Thai chilies, chopped (with the seeds)

1/2 t dried chili flakes (omit to tame the heat)

1 t ground turmeric

2 t sugar

1/2 t salt

12 ounces firm tofu, drained and cut into 3/4″ cubes

2 T vegetable or canola oil

1/2 yellow onion, cut into 1/8″ slices

2 shallots, thinly sliced

1 t minced garlic

2/3 c loosely packed whole Thai basil leaves

4 T roasted chopped peanuts (optional)

Directions:

Combine the lemongrass, soy sauce, chilies, chili flakes, turmeric, sugar and salt in a bowl and mix.  Add tofu cubes and toss to coat.  Let marinate 30 minutes.

Heat 1 T oil in a wok over medium high heat and add onion, shallots and garlic.  Stir fry for 1 minute, then lower heat to low and cook until onions are soft- about 3-5 minutes.  Remove from wok.

Wipe wok clean and add remaining tablespoon of oil and heat over medium heat.  When hot, add the tofu and marinade and brown the tofu cubes on each side- about 5 minutes.  Add the onion mixture back in and cook for abotu 2-3 minutes.  Add half the peanuts, if using, and all the thai basil leaves and turn off heat, then stir to incorporate.  Serve, topping with remaining peanuts.

    Question: What is nutritional yeast? Separately, but may be related, have you ever tried Bragg’s Liquid Aminos? It’s made from soy protein – very tasty seasoning. I am wondering if it is similar in tast to nutritional yeast?
