Thai Tilapia

Where to start?  I cooked a lot this weekend and have a lot to share this week.  First up us a really simple Thai-style tilapia, which comes

together in just a few minutes.  It has the typical sweet, salty, sour and spicy taste of Thai food and goes great with jasmine rice to soak up the juices.  This recipe, based on one from here and here, serves 3.


3 tilapia filets

Handful of fresh cilantro, chopped

2 T tamarind concentrate

1 T finely chopped fresh ginger

1 T finely chopped garlic

1″ piece of fresh ginger, peeled and cut into thin slices

1/2 t shrimp paste (optional)

3 T fish sauce

1 T brown or palm sugar

1-2 Thai chilis, seeds removed and cut into thin slices


Combine all ingredients except the fish in a medium bowl and stir to combine.  Taste and add more fish sauce, tamarind or sugar, to your liking.  Place tilapia filets in a 9 x 13″ glass baking dish and pour marinade over the top.  Refrigerate for 15-30 minutes.

Preheat oven to 350 degrees.  Cover baking dish with foil and bake for 15-20 minutes, or until fish is cooked.  Remove from oven and serve immediately.

    It sure is a delicious recipe! and even faster if you saute` it instead of baking it.
