Mexican Chopped Salad with Honey Lime Dressing

I’ll go ahead and get it out of the way- there’s going to be a dry spell around here for the next 2 weeks.  I’m going out of town for work

and have been working some late hours, so there hasn’t been too much notable cooking going on.  However, I do have this one good recipe to leave you with, and maybe another one I’ll schedule to post while I’m away.  This recipe is something I made a few years ago and decided to revisit.  It’s a Mexican chopped salad with a honey lime cilantro vinaigrette, and it goes great with grilled chicken or some sauteed shrimp.   If you make it with chicken, I recommend marinating it in some of the dressing for an hour of so before you grill it and it will be nice and juicy.  You can use whatever vegetables you like- I recommend black beans, hearts of palm, tomatoes and avocado, but you could throw in some red pepper, corn or cucumber as well.  This recipe comes from epicurious.com and serves 4.

Ingredients:

For the dressing:

1/4 c freshly squeezed lime juice

2 T or more olive oil

2 T honey

2 T fresh minced cilantro

For the salad:

Mixed greens

1 14 oz can black beans, drained and rinsed

2 tomatoes, chopped

7 oz hearts of palm, drained and chopped

1 (0r 2) avocados, diced

4 chicken breasts, marinated for 1 hour in 1/4 c of the dressing, then grilled

or

1 lb sauteed shrimp, peeled and deveined and seasoned with Cajun seasoning

Directions:

Combine all dressing ingredients and shake in a tightly closed jar to mix.

Combine black beans, tomatoes, heart of palm and avocado in a small bowl and dress with 2 T of the dressing.  Stir to combine.

Grill chicken or saute shrimp until just cooked.

Arrange salad greens on plates.  Divide black bean mixture among plates and top with grilled chicken  or shrimp.  Spoon dressing over salad as desired.
