One of the most memorable dishes we had in Spain was a salad of spinach, smoked salmon, goat cheese and pomegranate seeds.  It was sweet, savory and tangy all at the same time.  When I made this for Mother’s Day, I was not willing to pay $6.00 for a handful of pomegranate seeds, so the mothers had to settle for dried cherries, which were equally good.  Fresh sliced strawberries would be another nice substitute.  I dressed the salad with a balsamic honey vinaigrette, but you could use any other mildly sweet vinaigrette.  Serves 8 as a side dish.


2 bags baby spinach

1/3 c smoked salmon, cut into bite sized pieces

1/2 c pomegranate seeds or dried cherries

1/2 log goat cheese, crumbled

Balsamic vinaigrette:

2-3 T balsamic vinegar

2 T honey

3 T olive oil

salt and pepper to taste


Mix dressing ingredients and adjust to taste.  Toss dressing with spinach and arrange on a platter.  Top spinach with smoked salmon, dried cherries and goat cheese and serve.

    Oh my, this salad was delicious! The dressing was perfect for the combination of goat cheese, tart cherries and salty salmon, and spinach is always my first choice. This could easily be a stand-alone meal with a crispy bread.

    This is delicious, thanks so much for sharing! I substituted dried cranberries for the cherry/pomegranate.
