Broccoli Slaw

A couple years ago, Greg’s sister Alison made this broccoli slaw for Christmas and I really loved it.  It’s beautiful to look at since it’s so brightly colored and really crunchy and delicious.  All the vegetables make it seem healthy, even when I have a plate full of sausage meatballs at Christmas.  Serves 4-6 as a side dish.

Ingredients:

Slaw:

1 bag broccoli slaw

1 red bell pepper, diced

1 bunch green onions, sliced

1 package Ramen Noodle soup, Oriental flavor (crunch noodles up while still in bag and save flavor packet for dressing)

1/4 c each sliced almonds and cashews

Dressing:

1/2 c vegetable oil

3 T red wine vinegar

3 T light brown sugar

flavor packet from soup

salt and pepper to taste

Directions:

Place all slaw ingredients except for nuts into a serving bowl and mix to combine.  Combine all dressing ingredients in small bowl and mix together.  Pour dressing onto slaw and mix to coat the salad in the dressing.  Just before serving, mix in the nuts.

    I made this last night for a potluck but after Dan saw it he made me leave it at home and take box brownies instead – he wanted it all for himself! I took some leftovers to work today and it was a yummy lunch. Quick and easy too!
