Holiday Caipirinhas

These are magical!  A great combination of lime, ginger and mint and really zingy from the ginger beer.  Plus, this is a make-ahead cocktail you can have ready for a party and fix in just 2 steps right before serving so you’re not tending bar all night.  I’m sure you could make this with regular rum, but the cachaca makes it more authentic.  This makes 8-10 drinks, depending on how big you make them.

Ingredients:

Green peel only from 4 limes, cut into 2″ lengths

1 c fresh lime juice

1/4 c sugar

30 fresh mint leaves

8 1/4″ slices of peeled fresh ginger

1 c cachaca

2-3 bottles ginger beer

Directions:

Combine lime peel, lime juice, sugar, mint and ginger in a pitcher.  With the handle of a spoon or a muddler, crush the ingredients and mix.  Stir in the cachaca.  This will keep in the refrigerator for 6 hours.  Before serving, add 3 ice cubes to the alcohol mixture and stir to melt.  Fill glasses with ice and pour strained alcohol mixture into glass, filling up halfway.  Pour an equal amount of ginger beer on the top and stir to combine.  Garnish with more mint if desired and serve immediately.
