Chocolate Chip Cookies

These cookies are my mom’s creation and probably the reason I started cooking and baking…because if I could make these, I could have cookies anytime I wanted when I was a kid.  These cookies are a variation on the Toll House recipe, and turn out moister and chewier.


1/2 c butter

1/2 c shortening

1 1/2 c brown sugar

2 eggs

1 t vanilla extract

2 1/4 c all-purpose flour

1 t baking powder

1 t baking soda

1 t salt

2 c semi-sweet chocolate chips


Preheat oven to 350 degrees. Cream butter, shortening and brown sugar with a mixer.  Add eggs and vanilla and beat at low speed until combined.  Add flour, baking powder, baking soda and salt and beat until thoroughly combined.  Stir in chocolate chips.  Mound rounded tablespoons onto greased baking sheets and bake 11-14 minutes, until set and edges are beginning to brown (they will be chewier if you leave them in for 11 minutes, crispier if you leave them for 14 minutes).  Let cool on wire racks if you have enough restraint not to eat them right out of the oven.
