Chicken Chorizo and Veggie Chili

I am still trying to perfect a chili recipe, and I think I got close this weekend.  There were 2 keys to it: chicken chorizo sausage and ground chipotle chili (both available from the farmer’s market).  The chorizo added a ton of its own flavor and the chipotle added smokiness.  With some veggies added and served over brown rice, it was a pretty healthy chili.  You could omit the chorizo to make this vegetarian.

Ingredients:

1 T canola or vegetable oil

2 cloves garlic, minced

1 small onion (optional)

4 hot dog sizes links of chicken chorizo, removed from casing

1 carrot, cut into small dice

2 stalks celery, cut into small dice

1 medium zucchini, cut into small dice

1 T chili powder

1 1/2 t ground chipotle chili powder

1 t ground cumin

1 t ground corriander

1 t dried oregano

1/4 t cayenne pepper (or omit to make less spicy)

1 c chicken or veggie stock

1 28 oz can chopped tomatoes

1 14 oz can chopped tomatoes

3 14 oz cans of your choice of beans (I used black beans, red kidney beans and pintos)

Salt and pepper to taste

Cooked brown rice

Shredded cheese and sour cream for toppings

Directions:

Heat oil in large Dutch oven or soup pot over medium heat, then add garlic and onion.  Stir and cook 1 minute, then add chorizo.  Cook, breaking chorizo spoon into small pieces with the back of a spoon.  Add carrots, celery and zucchini and cook until vegetables begin to soften, about 4 minutes.  Add chili powder, chipotle, cumin, coriander, oregano and cayenne and cook, stirring for a minute, until you begin to smell the spices.  Add stock, tomatoes and beans and bring to a simmer over medium high heat.  Reduce heat to medium low and simmer, partially covered, for 45 mintues.  Taste and adjust for salt.  Serve over brown rice with toppings as desired.

    I’d asked Sarah for a recipe for chili for a cookoff we had at work. She suggested this one and I’m happy to say it won second place! It was yummy yummy. The chorizo chicken sausage is delicious.
