Indian Cauliflower and Peas

I didn’t really like cauliflower until I had it in Indian food.  It’s so boring on its own, but Indian spices transform it into a really flavorful, tender vegetable.  I made a recipe similar to this a few years ago, but have since lost the recipe.  This is my rendition of it.


2 T vegetable oil

1 T butter

1 medium onion, chopped

2 cloves garlic, chopped

1 inch piece ginger, chopped

2 t black mustard seeds

1/2 t garam masala

1 t ground cumin

1 t ground coriander

1/2 t turmeric

1 head cauliflower, chopped into florets

1 t salt

1 c canned crushed tomatoes

3/4 c frozen peas


Heat oil and butter in a large non-stick skillet over medium heat.  Add onion and cook until beginning to soften, about 3 minutes.  Add garlic and ginger and cook for 1 mintue.  Add spices: mustard seeds, garam masala, cumin, coriander, turmeric and salt.  Cook for 1 minute, stirring.  Add cauliflower and stir to incorporate.  Cook for 2-3 minutes, until cauliflower is beginning to soften.  Add tomatoes and stir, then cook, covered, for about 10 mintues or until cauliflower is almost done.  Add peas, stir, and cook 2 mintues, until peas are done.
