Raita is a cooling yogurt sauce served with spicy Indian foods to temper the heat.  I’ve tried a few recipes and this is my favorite in terms of flavor and consistency.  It’s best to let it sit for about 30 minutes before you use it, so the cucumber can thin the sauce and the yogurt isn’t cold from the fridge.


1 c plain yogurt

1/2 c chopped English (seedless) cucumber

2 T chopped fresh cilantro

1/2 t ground coriander

1/2 t ground cumin


Mix al ingredients in a small bowl and season with salt if needed.  Let sit at room temperature for 30 mintues before serving.
