Banana Oatmeal Bread

In my opinion, bananas are only good for one thing- banana bread. Particularly this banana bread that has oatmeal and isn’t as greasy as most. My mom even calls it “good for you banana oatmeal bread,” but I think that might be pushing it.

Ingredients:

1 c over-ripe bananas (about 2 large)

1/2 c sugar

1/2 c canola or vegetable oil

2 egg whites

1/3 c skim milk

1 1/4 c flour

1 c old-fashioned oatmeal (not quick cooking)

2 t baking powder

1/2 t baking soda

Directions:

Heat oven to 350°. Spray loaf pan with cooking spray. Mash bananas in large bowl, then all all other ingredients. Mix until just combined. Pour into prepared pan and bake 55-60 minutes or until a toothpick comes out clean.
