Many of my good recipes come from my Aunt Lisa, who’s a great cook. This one is one of my favorites- garlicky shrimp scampi pasta. It’s quick to make, a great summer dish and really warm and comforting in the winter.
Ingredients:
1 box linguine
3-4 T olive oil
1/4 c chopped garlic (Chop garlic with a knife. Using a garlic press makes the flavor too strong)
1/2 t red pepper flakes (or to taste)
1 t dried Italian seasoning
1 1/2 lb peeled shrimp
lots of grated parmesean
Directions:
Cook pasta according to package directions. Save 1/2 c of the pasta water. Heat oil in a large skillet over medium heat. Add garlic, turn heat down heat and saute until golden, about 3-5 minutes. Be careful not to burn the garlic. Add red pepper flakes and Italian seasoning and stir to incorporate. Add the shrimp and cook, flipping once, until just done. Add pasta and cheese (as much as you like- start with 1/2 c) and some of the pasta water to loosen the pasta. Serve and top with additional cheese.
