I typically think marinades do nothing for really flavoring the taste of meat, other than a little coating on the outside that usually gets cooked off. This marinade from Gourmet really changed my mind. It made the meat really tender and gave the chicken a nice flavor coating on the outside. I’ve actually made this one twice! I serve this with yellow rice and sauteed vegetables to make a meal.
Ingredients:
1/3 cup soy sauce
2 tablespoons fresh lime juice
5 garlic cloves
2 teaspoons ground cumin
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 t black pepper
1 tablespoon vegetable oil
4 boneless, skinless chicken breasts, or other cuts of chicken to serve 4
Directions:
Blend soy sauce, lime juice, garlic, cumin, paprika, oregano, pepper, and oil in a blender. Add chicken, flip to coat and let marinate overnight. Grill or bake chicken as desired.
